How to make bread
To make bread, you must take time and respect various stages.
First comes the kneading of dough and then what is called "pointage" (when you leave dough rest).
Then comes "détaillage" (the dough is cut into dough rolls depending on the size that is wanted) and "détente" (yet another period of rest for the rolls).
Next comes "façonnage" (the rolls are given their shape) and yet another rest period referred to as "apprêt".
When all these stages are finished (3 hours minimum), you can put the rolls into the oven : it is "baking" time.
For traditional bread it is even better to prepare the dough on the previous day.
